Tofu Breakfast Scramble
The soaring cost of eggs has many people scrambling to find a less expensive alternative for breakfast. The recipe below offers a protein-rich, low carb, low cholesterol way of enriching your morning routine.
Ingredients: 1 pound of SURATA tofu; 2 TBS olive oil; 1 tsp. each of garlic powder, cumin, turmeric. Optional: 1/4 cup chopped onion.
Procedure: Drain the tofu for a few minutes after removing it from the package. SURATA tofu is generally very firm and does not require much draining or drying. Place it in a bowl and mash it up with a fork or fingers until it has the look and consistency of, well, scrambled eggs. Add 1 TBS of olive oil along with the garlic, cumin, and turmeric and mix well until the tofu is evenly blended with the oil and spices.
Heat the remaining TBS of olive oil in a pan. If using onion, add it to the pan and stir fry until the onion turns clear. Add the tofu mixture and stir fry until the tofu is good and hot and begins to brown around the edges (about 5 – 8 minutes).
That’s it! You can supplement your breakfast by adding spinach, mushrooms, broccoli, bell pepper, or whatever else your imagination can suggest!
