Looks and tastes like egg or potato salad


1 pound Surata Firm tofu, drained and mashed.
1 TBS mayonnaise or plain yogurt.
¼ cup tahini.
1 tsp mustard.
1 TBS tamari.
¼ cup onion, finely chopped.
1 small clove garlic, minced.
¼ cup shredded carrots.
1 TBS chopped fresh parsley.


1 green or red bell pepper, minced.
1 rib celery, chopped finely.
2 TBS dill pickle relish.

Mix all ingredients together. Spread on toast, pita, crackers, or roll up in lettuce leaves.
